All of the gas tank end part of the emissions are typically removed along with all piping/hoses. The evap solenoid on the intake is usually left. I think a few have been built or modified with evap system, but not many.
It's recommended to get your general airflow/fueling correct before worrying about idle. This is without reviewing the log so I'm not saying you airflow/fueling is wrong. But a lot of people worry about idle at first, and that will cleanup with proper airflow tables.

I would start with just swapping the 300/400. I was very much surprised at how well the Goblin rides, although I pick my drives to be good pavement for the most part.

You typically have to use a bolt or the proper tool to install a damper. This usually isn't a tap it on fit. Often there isn't a key and it's an interference fit that takes a lot to get it on. At least yours is keyed. I'm not sure that...
If you aren't willing to use a smart phone, everything else is pretty much obsolete other than maybe something like TrackAddict/HPT on a lap top.

At 6ft tall, remember that the adjuster will add a little height to the seat that you might not like, depending on your torso length and seat choice. I had adjusters on mine and removed it to get the seat lower since no one else drives. And I'm 6ft tall also.
