Awesome! I think your build goals are pretty similar to mine, I plan to mainly do time attack, although overall a bit more modest. I'm excited to see what you cook up, that thing's going to be a monster with a built EA888! Have you decided what turbo you're going to be using?
My answer would be a Golf Alltrack, and put an IS20/IS38 on it, but I'm also very biased. There were a decent number of good wagon options available in the 2015-2020 era.
iirc they said they were planning to keep producing the V1 for at least a year after the V2 comes out, but that was a while ago so idk their current plans.
Not yet, they're still working on the production prototype. If I had to guess maybe spring when the first frames will ship (complete guess, I'm not privy to anything more than anyone else)?

I'm sure there are plenty of rusty mk7's out there, but you've got my personal record for the rustiest mk7 I've seen someone do a lot of work on. Wild that these cars are a decade old now, I'm not used to it. Good luck with the progress!
I'm not certain because I'm more familiar with the manual, but if the clip on the end is the style I think it is, it's a C-clip that needs a screw driver inserted in it and to be pulled away to the left of the picture.

I'm aware this is probably totally out of our control and too late, but I wish/hope we'd be able to use stock 5x112 ET35-50 wheels on the golf wheel bearings and hubs. Both because then I'd be able to use wheels I already have for my golfs, but also because the reluctor for the wheel speed...
Considering what you've been through with this car, getting it started before removing it probably does make sense, just to make sure there's no other little things that'll hold you up later.

1.8 hpfp. This was my own bin using Switchleg's flex fuel logic. I'm skeptical that you'll have much luck with higher E with the stock injectors. The 1.8's DI injectors are a good bit smaller than the 2.0's.
tbh this was long enough ago I don't remember. I don't think I was worried about timing yet because I was about to switch to MPI anyways. My current tune is closer to 16 degrees at the top, and I know even that's conservative.
