Just to confirm, because this setup pressurizes the reservoir which is shared between the brakes and the clutch, this doohickey will let me bleed both systems, right?

Yes, however do not let the fluid level get even the slightest bit low! Overfill it when you go to bleed the clutch. The wall that separates the two chambers is very high and fluid will not flow over the clutch reservoir if it's low.
